Creole Catfish with Tartar Sauce
Ingredients
- 1 pound catfish fillets
- 1 ½ cups 1 percent buttermilk
- 2 teaspoons Cajun seasoning
- 1 ½ cups cornflake crumbs
- Ingredients for Creole tartar sauce:
- ½ cup mayonnaise
- 1 tablespoon sweet relish
- 1 teaspoon Cajun seasoning
- dash of hot sauce
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 350 degrees. Cover baking sheet with tinfoil and spray with non stick spray.
- Mix the buttermilk and Cajun seasoning in a large zip lock bag. Cut catfish into 4-ounce serving portions. Marinate catfish in buttermilk for at least 30 minutes.
- Coat the catfish in the cornflake crumbs and place on prepared baking sheet. Lightly spray the top of the fish with cooking oil spray to make golden brown and crunchy.
- Bake for 15 minutes.
