Cowboy Caviar
Ingredients
- 2 cans shoepeg corn, drained (or 1 can white corn, drained)
- 1 cup black eyed peas, drained
- 1 tomato, chopped (I use more)
- 1/2 bunch cilantro, chopped
- 1 bunch green onions, chopped
- 2 cloves garlic, minced
- 2 avacados, chopped
- 2 teaspoons cumin
- 1/4 teaspoon pepper
- 3/4 teaspoon salt
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
Instructions
- Combine corn, peas, tomato, cilantro, onions, garlic and avacados into a bowl and stir gently to combine. In a separate bowl combine cumin, pepper, salt, vinegar and olive oil. Whisk until well mixed. Fold dressing into the corn mixture and chill. Serve with corn chips - scoops work best. For another dressing option: 2 packages good season zesty Italian dressing mix - (mix as directed on package)
