Cheesecake Bars
Ingredients
- Graham Cracker Crust
- 3 cups graham cracker crumbs , (24 full crackers)
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 12 tablespoons unsalted butter , melted
- Cheesecake Filling
- 32 ounces cream cheese , softened (4 blocks)
- 1 cup white sugar
- 4 large eggs
- 1/2 cup sour cream
- 2 teaspoon vanilla extract
Instructions
- Preheat oven to 325 degrees and line a 9x13 baking dish with parchment paper.
- Mix the graham cracker crumbs, sugar and melted butter together then press it into the baking dish in an even layer.
- To your stand mixer add the cream cheese and sugar on high speed until light and fluffy.
- Lower the speed to medium and add in the eggs, sour cream and vanilla until smooth.
- Carefully spread mixture on the crust and bake for 40-45 minutes, until set and firm.
- Chill completely before serving.
- Remove the whole cake by lifting the parchment paper and cut into nice squares.
