Strawberry Cheesecake Pie
Ingredients
- GRAHAM CRACKER CRUST
- 1 1/2 cups graham cracker crumbs (or 10 graham cracker sheets pulverized to crumbs in a food processor)
- 2 Tablespoons sugar
- 1 Tablespoons brown sugar packed
- 7 Tablespoons butter melted
- CHEESECAKE LAYER
- 8 oz cream cheese softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream
- STRAWBERRY TOPPING
- 5-6 cups quartered strawberries, stems removed divided
- 1/2 cup sugar
- 2 Tbsp cornstarch
- 1 Tbsp lemon juice
Instructions
- Pulverize graham crackers in food processor until finely ground into crumbs (skip this step if starting with graham cracker crumbs).
- Combine graham cracker crumbs and sugars in a medium-sized bowl. Add melted butter and use a fork to combine ingredients well.
- Pour mixture into pie or springform pan. Use the (clean!) bottom of a measuring cup to firmly pack crumbs into the bottom of the pan and (if using a pie pan) gently press up the sides. Use your fingers to pack crumbs tightly into the sides of the pie pan.
- Refrigerate or freeze for 10-20 minutes before filling.
- In small saucepan, combine 2 cups strawberries (280g), sugar, cornstarch, and lemon juice over medium-low heat.
- Stir frequently until strawberries release their juices. Increase heat to medium-high and bring to a boil, stirring constantly. Use a potato masher to crush the strawberries until mostly liquid (it's fine if small pieces are remaining).
- Boil (still stirring constantly) for 1 minutes and remove from heat, place in new heat proof container to cool faster. Set aside while you prepare your cream cheese layer
- In a medium-sized bowl, beat together cream cheese, powdered sugar, and vanilla extract until combined.
- In a separate, clean bowl, beat 1 cup heavy cream to stiff peaks
- Fold into cream cheese mixture -- the resulting mixture will be thick and fluffy.
- Spread evenly into prepared graham cracker crust and place in refrigerator while your strawberry mixture continues to cool.
- Once strawberry mixture has cooled completely, add remaining strawberries and stir well. Pour over cream cheese layer, piling/mounding strawberries towards the center. Decorate with strawberries and whipped cream.
