Avocado-Egg BLT
Ingredients
- 2 slices Whole grain Bread (our favorite is Alpine Valley 9 grain)
- 2 tablespoons mashed ripe avacado
- 1/8 teaspoon minced garlic
- 2 slices cooked bacon
- a few thin slices of red onion
- handful of greens, arugula or lettuce leaf
- 2-3 thin slices of tomato
- 1 hard boiled egg
- salt and fresh cracked pepper
Instructions
- Toast Bread
- Mash a whole avocado and add garlic and spread on 2 tablespoons on bread.
- Place bacon and onion slices on top of avocado.
- Top with greens, sliced tomato, and egg.
- Sprinkle with salt and pepper.
- If you want to serve it open faced drizzle a little olive oil on top or top with the other piece of toasted bread.
