Tortilla Slaw
Ingredients
- Tri-colored corn tortillas (yellow, red, blue) – 2 cups
- 4 cups Coleslaw vegetables (Red, green & Napa cabbage and carrots)
- 1 green onion
- 1 tbsp fresh cilantro
- ¼ cup Toasted pumpkin seeds
- Cilantro Lime Vinaigrette Dressing:
- 1 oz. Fresh lime juice
- 1 oz. Cider vinegar
- 1 1/2 tbsp. Honey
- 1/2 tbsp. Chopped garlic
- 1 tsp. Salt
- 1/2 tsp. Pepper
- 1/2 cup. Fresh cilantro
- 1/2 cup Olive oil
- 1/2 cup Vegetable oil
Instructions
- Coleslaw Vegetables deep fry until crispy, about one minute
- Mix all of the ingredients for dressing together EXCEPT the oil in a blender. Slowly add the oil and blend until emulsified.
- Combine all ingredients in a bowl and toss with the cilantro lime vinaigrette dressing.
- Prepare the tortilla slaw up to 1 hour ahead of time and add dressing right before serving.
- Great as a side or served under coconut shrimp.
