Broccoli Cheddar Soup
Ingredients
- 4 cups peeled & cubed potatoes
- 1 cup chopped onion
- 2 cups sliced carrots
- 3 cups chopped broccoli
- 1 cube of butter
- 3 Tbsp. flour
- 2 cups milk
- 1 lb. velveeta cheese (half of block)
- 1 tsp. dry mustard
- ¼ tsp. pepper
- 3 chicken boullion cubes
Instructions
- Add potatoes, onion, and carrots to a pan and boil for 10 minutes.
- Add chopped broccoli and boil for 10 minutes more. Drain some water, leaving some in so the soup isn’t too thick at the end.
- In another saucepan Melt butter and Stir in flour. Add milk, stir until bubbly & thick. Add velveeta cheese, mustard, pepper, and boullion.
- Combine both pots into one and serve.
