Oven Roasted Vegetables
Ingredients
- 2 medium potatoes, cut into medium cubes
- 2 medium sweet potatoes, cut into medium cubes
- 1 large red onion, cut into large pieces
- 2 large carrots, cut in shape of carrot sticks
- 3 cloves garlic, crushed or minced
- 3 fresh rosemary springs, cut in 1 inch cuts
- large handful of green beans
- 1 to 4 tbsp. olive oil
- season to taste
Instructions
- Put all ingredients in a bowl and mix until evenly coated with olive oil. Place in greased (pam) or nonstick baking pan in one even layer. Roast in preheated oven for 20 to 25 minutes at 450. Lower heat to 375 for another 15 to 20 minutes until done.
