Granola
Ingredients
- 8 cups old-fashioned oatmeal
- 6 cups Total flakes
- 3 cups coconut, shredded
- 1 cup unsalted, raw sunflower seeds
- 3 cups sliced almonds
- 2 cups wheat germ
- 1 cup canola oil
- 1 cup water
- 1 ½ cups brown sugar
- ½ cup honey
- 3 tablespoons vanilla
Instructions
- Combine the oatmeal, total flakes, coconut, sunflower seeds, almonds and wheat germ in a very large metal mixing bowl in that order.
- Wash your hands well, then very gently toss everything together.
- In a microwaveable bowl combine oil, water, brown sugar, and honey. Microwave for 2-3 minutes until warm and stir until sugar and honey are dissolved.
- Add 3 tablespoons vanilla to the microwaved mixture.
- Pour over cereal mixture and gently combine with a large spatula or spoon until well coated.
- Spread out on 2 large ( 12 ½ x 17 ½) cookie sheets. Place in oven at 225 degrees and bake for 45-50 minutes. Remove from oven and turn granola with spatula so bottom side is up and continue to bake for another 20 -30 min. When the granola is mostly dry but not crispy and hard, it is done. It is easy to bake it too long and it gets really crunchy. I like it a little softer. Remove from oven and stir. I usually spread it out on 1 or 2 additional pans so it is in a thinner layer, then let it sit overnight uncovered so it dries out good. Then you can put it plastic containers.
