New Year’s Eve Tradition.

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- 4 eggs, separated
- 2 cups milk
- 4 tbs. unsalted butter, melted, plus more for cooking
- Fillings: jam, peanut butter, chocolate ganache, chocolate chips, fruit
Instructions
- In a bowl whisk together flour, baking powder, salt and sugar.
- In a small bowl, lightly whisk the egg yokes, add milk and 4 tbs. melted butter. Whisk the yolk mixture into the flour mixture until well combined, the batter will be bumpy.
- In another bowl with an electric mixer beat the egg whites on high speed until stiff (2-3 minutes). Fold whites into the batter.
- Put ¼ tsp. butter in each well of the pancake pan. Set over medium heat and heat until the butter begins to bubble. Pour 1 tbsp. batter into each well. Put 1 tsp. of the filling of your choice in the center of each pancake and top with 1 tbsp. batter
- Some favorite fillings are: brown sugar/butter mixture, rolled in cinnamon sugar, bacon, caramel, some jams.
