Betty Lou’s Chocolate Zucchini Cake
Ingredients
- 2 1/2 cups grated zucchini (skin on but no seeds)
- 1/2 cup cocoa
- 2 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 2 1/2 cups flour
- 2 tsp vanilla
- 3/4 cup butter
- 2 cups sugar
- 3 eggs
- 1/2 cup milk
- 1 cup chopped walnuts
Instructions
- Mix together flour, cocoa, baking powder, baking soda, salt and cinnamon and set aside.
- Cream together butter and sugar. Once creamed together add eggs, vanilla, milk and zucchini.
- Combine the wet and dry ingredients. Then add walnuts.
- Pour batter into a prepared bundt pan and bake at 350 for 1 hour and 10 minutes. Check after 1 hour.
- Frost with powdered sugar, vanilla and milk glaze.
