Waikiki Meatballs
Ingredients
- 4 Tbsp. cornstarch
- 1 can pineapple chunks drained (reserve syrup)
- 1 c. brown sugar
- 2/3 c. vinegar
- 2 Tbsp. soy sauce
- 1/2 c. fruit juice (apple, pineapple, orange)
- green peppers, cut into large pieces
- onion, cut into large pieces
- prepared meatballs
- If you want to make your own meatballs:
- 1 1/2 lb. ground beef
- 2/3 c. saltine crackers crushed
- 1/3 c. minced onion
- 1 egg
- 1 1/2 tsp. salt
- 1/4 tsp. ginger
- 1/4 cup milk
- 1 tbsp. shortening
Instructions
- Heat your prepared meatballs. Our favorite is chicken meatballs with pineapple. Do not use italian meatballs. If you choose to make your own meatballs mix beef, crumbs, onion, egg, salt and ginger and milk. Shape mixture in small balls. Melt shortening and brown meatballs.
- Mix together in a pan the cornstarch and brown sugar. Stir in reserved pineapple syrup, fruit juice, vinegar and soy sauce until smooth. Cook over medium heat, stirring constantly, until mixtures thickens and boils.
- Add sauce to meatballs. Add pineapple, green peppers and onions. Heat through. Serve over rice.
