Creamy Spinach and Tomato Tortellini
Ingredients
- 1 lb. fresh three cheese tortellini
- 2 Tbsp. olive oil
- 1/2 cup chopped onion
- 3 garlic cloves, minced
- 1/2 bag fresh spinach, chopped
- 1 cup fresh tomatoes, cubed
- 1/2 cup fresh basil or 1 1/2 tsp dried
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup heavy whipping cream
- 1/2 cup parmesan cheese (kraft, grated)
Instructions
- Cook onion and garlic in olive oil in skillet over medium heat. Add spinach, tomato, basil, salt and pepper. Cook together for 5 minutes. Stir in whipping cream and parmesan cheese. Cook until it thickens slightly.
- In the meantime, cook tortellini according to package directions. Be careful not to overcook and become too soft. Drain tortellini; stir gently together. Serve immediately.
