Creme Brulee
Ingredients
- 6 eggs
- 1/2 cup sugar
- 1 1/2 tsp vanilla
- 1 cup heavy cream
- 1 1/2 cup half and half cream
- 1/4 cup sugar (for caramel)
Instructions
- Preheat oven to 300 degrees
- Beat egg yolks, 1/2 cup sugar and vanilla in a mixing bowl until thick and creamy.
- Pour both types of cream and vanilla into a saucepan and stir over low heat until it almost comes to a boil. REmove the cream from the heat immediately. Stir cream (temper, temper, temper) into the egg yolk mixture; beat until combined. Put the mixture back into the saucepan and heat it up constantly stirring until it gets thick (do not over cook).
- Pour into a shallow heat-proof dish. Put the dishes in a large 9x13 pan and pour hot water around the creme brulee.
- Bake in a preheated oven for 30 minutes. Remove from the oven and cool to room temperature. Refrigerate for 2 hours, or overnight.
- Sift the sugar evenly over the custards. Use your torch to burn the sugar until it becomes caramel. Eat right away.
