Fruit Pizza
Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 tsp cornstarch
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla
- Frosting:
- 8 oz. cream cheese, softened
- 3 Tbsp butter, softened
- 1 1/4 cups confections sugar
- 1 tsp vanilla
- 3 cups assorted sliced fresh fruit
Instructions
- Whisk the flour, cornstarch, baking powder, and salt together in a medium bowl.
- In a large bowl with a handheld mixture or stand mixer beat together butter and sugar until combined and creamy. Add in one egg and vanilla. Add the dry ingredients and beat on low until well combined.
- Chill dough for 20 minutes or up to 1 day.
- Preheat oven to 350. Line a baking sheet with parchment paper. Press dough into a 12 inch pizza pan (9-10 inch circle, about 1/3 inch thick)
- Bake for 17-19 minutes or until the edges are very lightly brown. Do not overbake. Cool crust completely.
- Make Frosting: In a medium bowl beat the cream cheese and butter together until smooth. Add the powdered sugar and vanilla and combine until creamy. Spread a thick layer over the cooled cookie.
- Decorate with chilled fruit.
