Napa Cabbage Picnic Salad
Ingredients
- 2/3 cup slivered almonds (may use flavored almond salad toppers)
- 8 cups (1 lb) coarsely shredded napa cabbage
- 12 ounces wasabe dried peas
- 1 1/3 cup finely sliced green onions
- 1 1/3 cup lightly packed cilantro leaves
- Dressing:
- 3 tbsp. rice vinegar
- 2 tbsp. sugar
- 2 tbsp. soy sauce
- 2 clove garlic peeled and minced
- 1/2 tsp. asian sesame oil
- 1/2 tsp. ground ginger
- 1/4 tsp. cayenne pepper
- 1 cup mayonnaise
Instructions
- Whisk together rice vinegar, sugar, soy sauce, garlic, sesame oil, ginger, and sugar until it dissolves. THen whisk in mayo.
- When ready to serve, gently combine the dressing and salad makings.
